Tartaric acid, 2,3-dihydroxysuccinic acid. Molecular formula: HOOCCHOHCHOHCOOH, that is, dihydroxysuccinic acid. It has two asymmetric carbon atoms and three stereoisomers, namely: dextrorotatory (D-type, L-type), levorotatory (L-type, D-type), and meso-type. Usually, racemic tartaric acid is also called gluconic acid. Dextrorotatory tartaric acid is widely distributed in higher plants in the form of free or K salt, Ca salt, and Mg salt, especially in fruits and leaves. L(+)-tartaric acid is widely used as an acidulant for beverages and other foods, such as wine, soft drinks, candy, bread, and some colloid sweets. It is used as a chemical resolving agent for the resolving of DL-aminobutanol, an intermediate in the manufacture of anti-tuberculosis drugs, by utilizing its optical activity. It can also be used as a chiral raw material for the synthesis of tartaric acid derivatives. It is used as a catalyst for polyester fabric resin finishing and a pH regulator for oryzanol production by utilizing its acidity. It is used as a complexing agent, masking agent, chelating agent, and anti-dyeing agent for electroplating, desulfurization, pickling, chemical analysis, and medical testing by utilizing its complexing property. It is used as a reducing agent for chemical mirror making by utilizing its reducing property. It is also used as a developer for photography. It can also complex with a variety of metal ions and can be used as a cleaning agent and polishing agent for metal surfaces.
